Carla and I woke up one morning and - as always - started talking about what we were going to do for dinner. For my birthday recently, she bought me a Filipino cookbook (because Filipino food is the best in the world) and settled on a spring roll recipe.
We love spring rolls and thought it would be fun to make them from scratch following the recipe, but it turns out finding spring roll wrappers in my home town is like sourcing yellow cake uranium. Hard to find.
Every supermarket’s ‘Asian section’ had about 6 items that
were of absolutely no use to us whatsoever. Eventually I found some online that required us to drive about 10 miles to a superstore, so at this point we had spent more on petrol than the spring rolls…
We had so much fun learning the technique and rolling a couple of dozen rolls (they got progressively better as we honed our skills) and we had a beautiful plate of
fried spring rolls filled with pork mince and diced veg. Coupled with the left over fried rice from the night before, I think we both agree our full day of wrapper hunting was well worth it :)
